GRILLED FLAT BREADS

200g fresh peas, shelled and cooked

200g fresh green beans, trimmed and cooked

1 buffalo mozzarella, torn
-
4 cherry tomatoes cut in half
-
2 vine tomatoes, each cut into 6

4 tbsp extra virgin olive oil
-
1 lemon, zested and juiced
-
salt and black pepper
-
small handful of basil, torn
-
2 grilled flatbreads

Place the cooked peas, beans, torn mozzarella and tomatoes in a medium sized bowl.

Mix together in a small bowl the olive oil and lemon zest and juice and then season with salt and pepper.
​

Pour over the salad and toss gently, spoon the salad onto a large salad dish, sprinkle with basil and serve with grilled flat breads.
