GRILLED FLAT BREADS

Serves 4

Ready in 35 minutes

  • 200g fresh peas, shelled and cooked

  • 200g fresh green beans, trimmed and cooked

  • 1 buffalo mozzarella, torn

  • 4 cherry tomatoes cut in half

  • 2 vine tomatoes, each cut into 6

  • 4 tbsp extra virgin olive oil

  • 1 lemon, zested and juiced

  • salt and black pepper

  • small handful of basil, torn

  • 2 grilled flatbreads

  • Place the cooked peas, beans, torn mozzarella and tomatoes in a medium sized bowl.

  • Mix together in a small bowl the olive oil and lemon zest and juice and then season with salt and pepper.

  • Pour over the salad and toss gently, spoon the salad onto a large salad dish, sprinkle with basil and serve with grilled flat breads.
